Boulder Now Boasts an Ajax Tavern and Limelight Hotel

Skip Aspen, now you can go to Boulder for those famous truffle fries.

Last week Boulder got a new hotel concept, and an outpost of the popular Aspen restaurant, Ajax Tavern. 

“The opening of Limelight Boulder marks a significant milestone in the growth of the Limelight brand, joining our broader portfolio of premium properties.” said Jeff Toscano, Aspen Hospitality CEO. “We are so proud to be joining the Boulder community, especially at such an important moment in time, as we open our doors in partnership with the University of Colorado and welcome guests to our beautiful new space that brings modern design and natural beauty together with the signature hospitality we are known for.”

Ajax Tavern first opened along with The Little Nell in Aspen, and remains a mountain hot spot year round. It’s famous for having one of the best après ski programs in the area. That same vibe comes out in the new location, while also offering a nod to Boulder’s own robust mountain culture. 

Helming the kitchen for the whole operation is executive chef Jeff Gundy. The restaurant serves breakfast, lunch, and dinner, and has a detailed drink program and kids’ menu. Like the Aspen and Denver locations, Ajax’s beloved truffle fries are on the menu, and most of the dishes speak to the season as well as locally-sourced ingredients. Think Wagyu Bolognese, Butternut Squash Ravioli, Apple & Kale salad, and a classic pastrami sandwich.

Some unique-to-Boulder features to look forward to include the Ajax Airstream, custom-designed Airstream that will debut during the CU Buffaloes’ first home game on August 29. Starting then, the vehicle will be parked on-site two hours before each home game, serving classics from the restaurant. Bonus, they plan to have a live brass band playing music to get the party started. 

Also in tandem with the college, Ajax Tavern is launching “Steak Your Future,” a program for graduating CU Boulder seniors and their meaty future. Select students get to choose a Cross Creek Ranch steak to be dry-aged on property, each priced at $145 and available September 18 through 21. Participants enjoy dining perks and campus discounts throughout the year, and once graduation hits they can have a special dinner featuring the steak.

Visit Ajax Tavern in Boulder for breakfast Monday through Friday from 6:30 to 10 a.m., and Saturday and Sunday from 6:30 to 9 a.m.; brunch Saturday and Sunday from 9 a.m. to 3 p.m.; lunch Monday through Friday from 11:30 a.m. to 2:30 p.m.; and dinner daily from 5 to 10 p.m. The restaurant is located in the Limelight Boulder. 1295 University Ave., Boulder, limelighthotels.com
